Nutrition for Kids by a Kid Herself. Introducing Chef Niav!

Hi, my name is Niav.   I’m Ciara Foy’s 11 year old daughter!  Growing up with a Mom who is a Nutritionist, has inspired in me, a love for REAL FOOD! My Mom has been encouraging me for some time now, but I have finally decided to start guest blogging on her site!

This is my first blog post, so I would like to share a little about me and the kind of stuff I like to do. In my free time I loves to bike, swim, ski and skate board. I also LOVE to cook especially when my mom posts what I make on her Facebook page because I love seeing what you think about the meal I made. It’s so inspiring and fun reading all the great comments you leave for me! So much so that it was YOU that really pushed me to start this once a week blog.

Every week when I do a blog I will add a recipe so you can make the delicious things you see in the pictures. This week I’m posting my favorite recipe for sweet potato fries. Next week, I will give out a honey carrot recipe that is amazingly- awesome!!!  I also love slow cooker recipes because they are easy and yummy and if you need to go to work, you can put a bunch of stuff in the slow cooker and when you come home it will be ready! I don’t know many recipes for slow cookers but I will make some soon so you can have the yummy recipes!

Back to the recipe! All the recipes I share will be easy to do and ready in a flash without a lot of prepping. This first recipe is for yummy sweet potato fries, a wonderful sub for regular white fries! They are packed with vitamins and antioxidants, but even your kids will be in heaven, as they taste so gooooood!!!

Niav’s Sweet Potato Fries

 Ingredients

  • 2 tablespoons coconut sugar(raw)
  • 2 teaspoons pepper(more or less)
  • 1 teaspoon of salt(more or less)
  • 4 sweet potatoes

 Preparation

Turn your oven on to 450º then cut your potatoes how ever big you want, but you can see from my picture I keep them half an inch thick.  Put them on an oven sheet lined with parchment paper and rub the sweet potatoes with olive oil and next sprinkle the coconut sugar, pepper and salt mixture on the sweet potatoes and make sure they are covered well.

Cook for approximately 30-40 minutes flipping once.
