I am a huge fan of making life easy! So I’m always looking for every opportunity to make a meal that will produce leftovers! My daughter’s lunch today was a perfect example! Left over flat iron steak, a side of caprese salad (buffalo mozzarella), raw orange peppers with hummus, a quinoa cookie and a side of olive oil with balsamic vinegar for dressing the salad! Surprise, yes, we do eat beef occasionally.
