Kid Friendly Gluten Free Coconut Pancakes

I have two girls who both adore pancakes.  We generally stay away from gluten in my house, but I’m not militant about it.   In the past, I have used a little Kamut flour that is lower in gluten, higher in protein and easier to digest.  However, recently my 3-year-old has had a hard time even with a little gluten.  Tummy aches ensue and bowel movements become painful.

When I saw this beautiful looking pancake recipe in my newsfeed on Facebook from the Organic delivery, I use “Mama Earth Organics” I just had to try it.  Only problem was that I didn’t have any coconut milk, and we don’t use dairy, so the half and half was out.  No problem though because what I did have, was unsweetened fermented coconut “yogurt”.  I had to play around with the recipe a bit because coconut flour is a little tricky.  But I figured out the correct amount to produce beautifully fluffy, high fibre pancakes that have a more balanced amount of fat, are higher in fibre and contain good bacteria for a happy tummy!

Ingredients:

4 Organic pastured eggs
1/2 cup of unsweetened coconut yogurt
1/2 cup almond milk
2 teaspoons of pure organic vanilla extract
1 tablespoon of maple syrup
1/2 cup of coconut flour
1 teaspoon of baking soda
1 pinch of Himalayan sea salt
coconut oil as needed for cooking

Instructions:

*Beat the eggs furiously for a few minutes until they are light and frothy.  Then mix in the remaining wet ingredients.
*In a separate bowl mix all the dry ingredients together well.
*Add the dry ingredients to the wet ingredients and mix well.
*Let stand for a few minutes until the batter thickens.  It really does look like a brownie batter.

I found the key to cooking these perfectly, is making the pancakes small.  When you spoon the batter onto a hot pan with coconut oil, spread it out with a spoon.  You don’t want it too thick, but makes sure there is still coverage.  Cook on a very low heat, trust me, the lowest possible.  Yes, you must be patient.  Once the bottom is brown and the top is set enough that it seems ok to flip, do so.  If the top is still too wet, you’ll have a mess on your hands. Each pancake takes about 5 min to make.
